I can't believe I've been vegan for a whole year!
When I started on this adventure a year ago (still living in what must be one of Europe's most vegan-unfriendly countries), I had no idea where it would take me. To be completely honest, I was convinced that I wouldn't last a month. And here I am, one year later and more vegan than ever!
Way better skin.
Stronger, glossier hair.
No more stomach aches.
Much more energy and no more sluggishness.
Better sleep (although that could also be due to meditation)
An almost complete disappearance of cellulite (could also be due to lots of yoga)
...but all of that doesn't even begin to compare to how amazing it feels to live according to my values. Nothing tastes as good as compassionate feels!
Oh, and the food. Please don't believe the negative Nancys who claim that vegan food is "boring". It's anything but: most of the stuff I eat now is bursting with colours and flavours and is full of delicious variety!
Just a handful of all the yummy goodies I've eaten in the past year:
Homemade muffins in a variety of flavours (chocolate, almond, banana, vanilla, peanut butter)
Some mouthwatering appetizer plates courtesy of my personal chef slash boyfriend
Some of the yummiest breakfasts of my life
Spaghetti and "meat" balls
And just today, the most delicious pizza! David made one with tomato sauce, mushrooms, olives, green peppers and onions. Yum. Seriously, YUM.
Being vegan is amazing - it's not the easiest journey in the world, but it's definitely worth it if you are committed and dedicated. Your health gets better, you're helping the planet and saving hundreds of lives every year AND you get to eat the most delicious foods. What's not to love? I plan on staying vegan forever - I couldn't imagine life without my new lifestyle.
